Macco bean is among the oldest and tasty Sicilian recipes, Eun authentic dish of the poor peasant cuisine. It has spread throughout Sicily, with some variations depending on the province.

Prepare the vegetable broth with 2 l of water and lots of vegetables, do cuocer and collect until you have 1 l. The vegetables you can put them all, the ones you want.

Fry the finely chopped onion in a few tablespoons of oil and add the tomatoes that you will have removed the seeds and cut into strips. Add the beans and broth; cook a couple of hours until the beans are tender.

Meanwhile you open the mussels clean and wash in a pan, and with the water that will be released blend the beans until you have a fine cream, taste and season with salt and pepper.

Serve putting the cream of beans with above the mussels without shells, few drops of oil, and if you find them, sakura buds or some small leaf salad, or basil or some fennel shaving. It is an exceptional dish to try.
